Insects as Ingredients: One Hop Kitchen Revolutionizes Bolognese Sauce

I could easily be describing your dream girl. Or I could be lauding the incredible flavor profile of my new favorite bolognese sauces. One Hop Kitchen has created the world’s first best, and only insect based bolognese sauce using crickets and mealworms.

As they tout on their website, their sauces have big bolognese flavor with a tiny environmental footprint. Replacing beef with insect protein makes a huge difference. One jar of One Hop Kitchen’s bolognese saves 1900 L of water compared to beef (that’s 18 bathtubs). Livestock rearing is responsible for 18% of green house gas emissions – anything we can do to lower our reliance on livestock is a step in the right direction. Ok we know that eating insects is good for our health, and that of the environment, but what makes One Hop Kitchen so special?

Today I had the pleasure of speaking with Susan, founder of EntoMarket. For those of you not already familiar, EntoMarket is one of the leading online sellers of all things edible insect and beyond! What drew me to EntoMarket was not only the wide array of edible insects available for purchase, but the focus on educational materials to promote the topic as well.

Speaking with Susan was like getting drinks with a dear, longtime friend. She’s warm, quick-witted, and has quickly become a mini-idol of mine: a real ento-eductaion rockstar.

What Do Insects Taste Like?

What Do Insects Taste Like?

Maybe you’ve been seduced by my other articles or your curiosity has finally gotten the best of you. Or maybe you’ve watched a little kid munch a bug or two and want to vicariously understand what she’s tasting. Do you want an idea of what they taste like first? Here’s my best attempt at describing my Bugible culinary experiences.

*keep in mind that insects are, for the large part, taste-malleable. Insects, especially crickets, tend to both adopt the flavor of what they have been fed (mint-fed crickets will have a minty taste) or what they are cooked with (chili powder crickets vs lemon crickets vs crickets in a salad will all taste WAY different). I’ll be doing my best attempt to describe the unique flavor of insects, given these variations. Most of the bugs I have consumed have been either cooked at home or encountered at street vendors in Mexico or Thailand.
