There’s nothing like a deliciously cooked taco. The warm tortillas, the crisp lettuce, the perfectly-melted cheese, and the main ingredient: crickets. Today I want to share with you one of my favorite spins on a classic taco – the cricket taco. Not only is it healthier (crickets are a more sustainable and more nutritious protein addition than beef) but it also tastes ahhhh-mazing! It can be intimidating for newbies to cook with insects, but once you learn to treat them like any other ingredient, you’re golden!

See that smiling beauty above? Her name is Katelyn and she’s one of my greatest friends ever. She had never tried an insect before in her life, but she’s given me permission to let you all know that she would eat cricket tacos again anytime. They taste great, so put on your apron and let’s goooo!

Ingredients:

  1. 50 large crickets
  2. Corn tortillas
  3. 1 can beans
  4. 1 cob corn
  5. 2 tomatoes
  6. 2 nopales
  7. 1/2 head of lettuce
  8. 1/2 onion
  9. 1 avocado
  10. Cheese – however much you desire!
  11. 1 stick butter
  12. 1 tbsp salt
  13. Cilantro
  14. Limes

Preparation: 

How do you prepare crickets? First, get them from a reputable source. It’s important that they were raised for human consumption. Check out my resources page for a good list.

I like to buy live crickets and to freeze them to kill them humanely. After freezing, I wash my crickets thoroughly and salt them lightly … we’re ready to cook!

Cooking:

  1. Dice onions and nopales and mix with salt in a bowl
  2. In a separate bowl
  3. Heat stove top to medium and cook onions and nopales in a pan for about 5-6 min or until slightly crisp
  4. Add prepared crickets to the mix and cook for another 5-6 min
  5. In another pan, cook beans over medium heat until warm. Add tomatoes and corn.
  6. Combine all ingredients and cook for another 5 min
  7. Continually season to taste preference
  8. On a large, hot surface begin to cook your tortillas to warm them up. Lightly butter your hot surface and cook the tortillas just enough to make them golden on each side. Cook for about 45 seconds and then flip
  9. Set tortillas, cilantro, limes, prepped cheese, chopped lettuce, and cut avocado to the side to add to your taco
  10. Turn off the heat and stuff your taco with your warm and cold filings!
